Salmon wraps and chicken noodle soup

It was like a mini vacation. We ate smoked salmon wraps, took an hour of walking in the STILL -10c spring sunshine, twice, we made facials in the evening and talked while enjoying the fireplace. The kids played Wii, they set up Nerf gun wars and dragged pillows and mattrasses to make fortresses. All in all it as a good weekend to visit relatives. It's quite amazing to have some relatives as, if not soulmates, friends for life. It gives comfort to know that no matter how we're doing, whether we're busy or tense or stressed, they're willing to continue where we left off the last time. No reservations. Such a blessing. Nevertheless, it was only a one night sleepover.


Salmon wraps: (serves 6)

Taken from, surprise surprise from the latest Pirkka magazine, with a little twist. Always a recipe with a twist, if I'm the cook :D

Ingredients:
smoked salmon (3-400grams)
4-6 carrots
3 packs of sour cream, 2 dl each
fresh dill
chopped pickles
a red onion
a lemon
salt, sugar
a cucumber, chopped
fresh salad
two yellow peppers, chopped
2 packets of tortilla wraps

Into a bowl, grate a good bunch of carrots, add the chopped pickles and some red onion. Add the sour cream and season with salt, chopped dill, a little sugar and fresh lemon juice. Don't ask for measurments, taste.

Into separate bowls, chop the cucumber, peppers salmon and salad. Make sure that there are no fishbones left.

Spread some of the sourcream-carrot-mix to each tortilla and add the cucumber, peppers, salmon and salad. Wrap it all up and cover with aluminum foil or baking sheets cut up as triangles. You can tie them up with a tick thread.

I've noticed that I have trouble posting my own pictures here. The sole reason is that I simply don't have the time to take pictures! Any how, having said that, I'll share a recipe from a few days ago that disappeared quite fast into my hungry boys spoonful after spoonful.

Fast chicken noodle soup: (serves 6)

Ingredients:
2-3 fillets of unmrinated chicken breast
2 instant noodle packets
1 bag of frozen bali/wok vegetables
soy sauce
fish sauce

I simply chopped and fried the chicken with a little salt and seasoning. Then I added water and the noodle packs when the water came to a boil. I also then added the wok veggies and let the soup simmer until nice and soft. A splash of soy sauce and thai fish sauce to add taste. Voila, mom did it again. A few portions were left to be scavenged for the next day.
